GRAPEFRUIT AND AVOCADO SALAD


This super simple summer salad (you know I love an alliteration) is bright, flavorful, and can be whipped up in 5 minutes flat!


Serve as is or top with your favorite protein!

Ingredients:

1 grapefruit, peeled and divided + ½ grapefruit (for juice)

¼ cup white wine vinegar

1.5 tbsp honey

¼ tsp salt

½ tsp black pepper

1.5 tbsp olive oil

3 cups lettuce (your choice)

1/2 avocado, peeled and sliced or cubed


Directions:

1. Peel 1 grapefruit, discarding peel, and slice into segments – set aside.

2. Juice other ½ of grapefruit into a medium mixing bowl.

In the same bowl, whisk in vinegar, honey, salt, pepper, and oil.

3. Build your salad by layering lettuce, sliced grapefruit, and avocado and top with dressing. Optional: add protein of your choice!
