Not a fan of brussels sprouts? Well this salad will make you a fan! This creamy yet tangy dressing will add a burst of flavor while the sweet apple adds a perfect balance to the brussels sprouts.

This salad makes a perfect side or main and is great to take to holiday dinner parties, and the best part, it's done in 15 minutes!

SERVES:4 TIME: 15 MIN

INGREDIENTS:

2 Tbsp Extra Virgin Olive Oil

1 Tbsp Apple Cider Vinegar

2 Tsp Dijon Mustard

Salt and Pepper to Taste

1/4 Cup Plain Greek Yogurt (can sub coconut yogurt to make #vegan)

2 Tsp Maple Syrup

4 Cups Brussels Sprouts, Trimmed, Washed and Shredded (I typically buy the bags pre-shredded - it saves tons of time!)

1 Cup Parsley, Chopped and Packed Firm

1 Apple, Cored and Sliced

1/3 Cup Pumpkin Seeds (toasted, optional)

DIRECTIONS:

1. In a bowl, combine the extra virgin olive oil, apple cider vinegar, mustard, yogurt, maple syrup, sea salt and pepper. Mix well and set aside.

2. Add the thinly sliced brussels sprouts to a bowl and pour the dressing over top. Add the parsley, apple and pumpkin seeds then toss well to coat. Enjoy!
